If I delete these 3 entries in the database using phpmyadmin, what happens, except they disappear?

It could break access to you board or acp in worth case. Just delete over ACP -> System -> Modul Config. I think this is more safe. But why delete chat rooms ?? Are the not working fine ? Some extenion showing those if not translated or might could see this kind of text, even if they work.

Have you checked all 3 Modules if there is anywhere MChat inside ?
I try to clean data from extension if this removes the leftovers. Maybe enable / disable and try clean data again if all got deleted.MODUL-KONFIGURATION

This is the only one I found. It is also available in the module configuration.
The extension mchat rooms is completely removed and is no longer on the server.
Only the above 3 entries are still there

It looks it never was deinstalled from users profile settings. Normal pressing submit should cause an error if the entries are deleted. But take a look inside the panel like I told you and check if this MChat I marked should be the same like inside your User Panel. Deaktivate it, and then try to delete if there are no errors.
Best steps deactivate , check you user panel if tis gone and no errors and if all fine, you can go back acp and delete this module.
